Control plan for Provolone Valpadana DOP cheese - Protected Designation of Origin

The Regulation (EU) No 1151/2012 on quality schemes for agricultural and food products, in art. 7, requires that agri-food products benefiting from the PDO or PGI are obtained in compliance with the Specifications and that compliance with the requirements set out is controlled by control bodies authorised by the Member States.

The Consortium has selected CSQA Certificazioni Srl (hereinafter CSQA), as the authorised Control Body for the Protected Designation of Origin cheese Provolone Valpadana, pursuant to art. 53 of Law no. 128/98, as replaced from art. 14 of Law no. 526/99, which defined the attached document called DPC004 of 02/29/2016, as a guide for carrying out compliance control activities.

What does the Control Plan contain?

The Control Plan, drawn up on the basis of the Specifications deposited with the Ministry of Agricultural, Food and Forestry Policies and the amendments proposed and granted to the same, contains all the elements that characterise Provolone Valpadana cheese and, in particular:

  • the delimitation of the geographical area of production of the raw material, of transformation and processing, in whose territory all the subjects of the regulated supply chain must be located;
  • the description of the product with identification of the raw material, ingredients and final characteristics;
  • the description of the traditional method of obtaining;
  • the identification and traceability systems of the product and its components;
  • the presentation methods when the product is released for consumption.

In addition to the elements indicated above, the current Control Plan describes the set of controls to which the product must be subjected in order for it to be identified with the distinctive mark of the DOP Provolone Valpadana.

What does the control consist of?

The overall set of controls consists of both the activities directly carried out by the interested parties along the regulated production chain (self-control activities) and the conformity controls carried out by the Control Body in order to ascertain the complete conformity of the processes and products.

According to the provisions of this Control Plan, the self-control activities carried out by the regulated subjects in the supply chain give rise to the relevant registrations; these registrations are examined and assessed during the inspection checks.

Therefore, the recognized subjects of the supply chain must adequately produce and store the self-control documentation, making it available for the conformity checks carried out by the Control Body.
