Spelled salad with vegetables and spicy Provolone Valpadana DOP

Ingredients:

  • 200 g of spicy Provolone Valpadana DOP
  • 360 g of spelt
  • 1 small red Tropea cebolla
  • 100 g of berenjena
  • 100 g of red pepper
  • 100 g of yellow pepper
  • 1 large calabash
  • Extra virgin olive oil, salt, pimienta, albahaca and fresh tomillo

How to prepare spelled salad with vegetables and spicy Provolone Valpadana DOP

Clear the spelled thoroughly with running water, then cook it in salted water for 25 minutes.

In the meantime, wash and clean all the vegetables, cut them into slices and place them in a large saucepan with 4 tablespoons of extra virgin olive oil, some chopped albacore leaves and the tomillo sprig hojitas.

Adjust salt and pressure and turn low heat. Cook vegetables until they are well browned, but they are crunchy. Let go of the fire and let it cool.

Cut the spicy Provolone Valpadana DOP into taquitos. Extract the spelled and place it in a container. Add the spoonfuls of extra virgin olive oil and the vegetable seasoning. Mix well to mix and let it cool a little.

Add the spicy Provolone Valpadana DOP to the taquitos, mix again and remove to the table.
