Protection
The reason why the Consortium for the protection of the protected denomination of origin Provolone Valpadana DOP exists is contained in its own name: protection.
Because this, which has a very strong identity, whether in the Italian or European panorama, requires an authorized and official body, representing the producers of the raw material (leche), the transformers and the curators (who they take care of it for more than a year) that protects it, guarantees on consistency and excellence, and helps you to get to know your qualities.
Supervision, assistance and protection
The Consorcio, therefore, follows the different phases of the life of Provolone Valpadana DOP and does so in a very rigorous way, under the specific mandate of the Ministerio de Políticas Agrícolas y Forestales. Not if it limits itself to supervision: with a view to the future and the development of the markets, it offers scientific technical assistance to improve the production technologies more and more, from the health and organoleptic point of view.
In practice: the Consortium is a shield that protects all operators of any type of unfair competence. However, for consumers it is a guarantee that protects against fraud, counterfeiting and related damage: economical and healthy.
The Consortium was established in 1975 and has its headquarters in Cremona, precisely in the center of the Provolone Valpadana PDO production area
