Cereal baguette with rocket pesto, bresaola, spicy Provolone Valpadana DOP and fresh cucumber

Ingredients:

  • 2 cereal baguettes
  • 100 g Spicy Provolone
  • 1/2 cucumber
  • 100 g bresaola
  • black pepper
For the pesto:
  • 50 g rocket
  • 25 g pine nuts
  • 70 g extra virgin olive oil
  • salt

Preparation:

Start by preparing the rocket pesto. In a blender, combine all the ingredients and blend until you get a smooth mixture. Cut the Provolone Dolce into slices and the cucumber into rounds and set aside. Build the sandwich by making a layer of pesto on the base, place the bresaola and the slices of Provolone Dolce. Add the sliced cucumber and a drizzle of extra virgin olive oil and a pinch of pepper. Close the sandwich and serve.
