Rye bread sandwich with smoked salmon, dill mayonnaise, spicy Provolone Valpadana DOP, fresh cucumber and radishes

Ingredients:

  • 4 slices of rye bread
  • 100 g Spicy Provolone
  • 100g smoked salmon
  • 50 g fresh spinach
  • 1/2 cucumber
  • 2 radishes
For the dill mayonnaise:
  • 2 egg yolks
  • 1 lemon
  • 2 dl seed oil
  • 1 sprig of dill
  • salt
  • black pepper

Preparation:

Start by preparing the mayonnaise. In a bowl pour two egg yolks, a pinch of salt and pepper. Start whipping with the help of a whisk, adding the oil in a thin stream. Once thickened, add the lemon juice and chopped dill. Mix and then set aside. Cut the Provolone Piccante into slices and the cucumber and radishes into rounds. Take the slices of bread and spread a layer of mayonnaise on both sides. Place the spinach, smoked salmon, cucumber slices, Provolone Piccante and radishes. Close and serve.
