The Production Regulations of Provolone Valpadana DOP
The Protected Designation of Origin regulates belonging to a category considered to be excellent in the food and wine sector.
Provolone Valpadana was recognized as a DOP product in 1996. Therefore, all its producers must strictly comply with the production regulations.
This is a regulation that has the function of providing precise guidance and identifying quality standards for the production of this product.
To obtain the Protected Designation of Origin, it is necessary to meet the requirements. The first part of this regulation is that only products whose entire production process takes place within a specific geographical area can obtain PDO classification.
Thus, the Regulation provides that it can only be defined as Provolone Valpadana PDO if it is produced with the origin of the production area indicated.
The definition of Provolone Valpadana
The Regulation provides a definition of Provolone Valpadana, specifying that it is a "semi-hard queso made of milled pasta prepared with whole vaca milk, with natural fermentation acidity, originating from vacas grown exclusively in the selected production area".
To be able to qualify for the Protected Designation of Origin, it is necessary to maintain the reliability of the entire production process, starting from the origin: the feeding of the cat must also follow certain criteria!
