Gratinado of vegetables and sweet Provolone Valpadana DOP

Ingredients:

  • 100 g of sweet Provolone Valpadana DOP grated
  • 50 g of Provolone Valpadana DOP sweets in taquitos
  • 300 g of red onions
  • 300 g of calabashes
  • 300 g of potatoes
  • 3 spoonfuls of toasted bread
  • 100 ml of white wine
  • 100 ml of hot vegetable
  • Extra virgin olive oil, salt, pimienta, romero

How to prepare the vegetable gratin and sweet Provolone Valpadana DOP

Peel the potatoes, cut them to 3 mm thick and place them in cold water.

Also cut the calabacines well washed and dried in the same way, and the red cebollas previously peeled and without tips.

Grease a rectangular strip for the horn and place the vegetables, group them according to type and top them delicately: while taking care to adjust everything with salt and pepper and to spread them with a Romero needle.

Mix the heat and the wine and fry them over the vegetables, then cover them with aluminum foil, dust them with the pan and heat them for 40 minutes at 180°.

Remove the aluminum foil, spread the sweetly shaved Provolone Valpadana DOP and leave to gratinate for another 15 minutes.
