Orecchiette with sausage, broccoli and spicy Provolone Valpadana DOP

Ingredients:

  • 160 g of spicy Provolone Valpadana DOP
  • 320 g of “orecchiette” pasta
  • 1 garlic tooth
  • 300 g of sausage
  • 300 g of broccoli tips
  • 40 ml of white wine
  • Extra virgin olive oil, salt, pimienta, tomillo lemon

How to prepare orecchiette with sausage, broccoli and spicy Provolone Valpadana DOP

Place a large bowl of salad water. Pour 4 tablespoons of extra virgin olive oil into a large saucepan with the fat and brown for one minute.

Add the sausage to the skin and remove it well with the ingredients of a Madeira farmer. Cook for a couple of minutes, then add the white wine and let it evaporate.

Drizzle the broccoli tips in the salted water for approximately 5 minutes. Scrub them with a foam and place them directly on the stove with the salt and mix well. Adjust the salt and the sauce.

Drizzle the orecchiette in the same water used for the broccoli, then remove them and place them in the pan with the seasoning combined with a spoonful of cocción water. Skip one minute, then turn off the fire.

Add abundant tomillo lemon, continuing to mix, finally add the sharp Provolone Valpadana DOP and serve.
