THE CONSORTIUM
The Consorzio Tutela Provolone Valpadana is a voluntary organization, established in 1975 under the name Consorzio for the protection of typical Italian Provolone, later changed into Consorzio del formaggio tipico Provolone (1986), then Consorzio Tutela Provolone (1993) and then, in 2002, Consorzio Tutela Provolone Valpadana.
In recent years we have therefore committed ourselves to the protection of this P.D.O. cheese through a series of actions aimed at promotion on the one side and protection on the other.
In questi anni ci siamo quindi impegnati per la tutela di questo formaggio D.O.P. attraverso una serie di azioni mirate alla promozione da un lato e alla tutela dall’altro.
Why are we doing this?
With all these activities we are able to follow all stages of production such as spinning and maturing, and to supervise safety and quality. During its history, the Consortium has made the protection of this P.D.O. cheese its mission.
A careful control over the entire production chain and the participation of all producers is the best way to guarantee the quality and taste of this excellence, an important part of the Italian enogastronomic heritage.
THE TASKS OF THE CONSORTIUM
The Consortium is non-profit oriented and carries out the following activities:
- Promotion of the knowledge of Provolone Valpadana Protected Designation of Origin cheese in all markets
- Promotion of Provolone Valpadana Protected Designation of Origin cheese
- Taking care of the general interests of the Protected Designation of Origin cheese Provolone Valpadana
- Carrying out research and development activities in order to promote the constant perfecting of production techniques and the consequent quality improvement
- Organization and monitoring of training activities and food education projects in schools
- Assistance activities along the entire production chain of Provolone Valpadana P.D.O.
- Organizzazione e monitoraggio di attività formative e progetti di educazione alimentare nelle scuole
- Attività di assistenza lungo tutta la filiera produttiva del Provolone Valpadana D.O.P.
COMPANIES
The Consortium is a voluntary organisation: it is open to all producers who have their own dairies in the production area defined by the Production Specification and who process, in Provolone Valpadana P.D.O., exclusively milk collected in the area itself, as well as milk producers and all those who mature and/or market it wholesale.
